A crazy small batch of an experimental wine. We soaked Pinot Gris on Harrison apple skin pomace during fermentation. The result is a wildly aromatic beverage with notes of stone fruits and citrus peel. It’s bone dry (0g/L RS) and a slight effervescence as it was bottled before fermentation finished. Super fun as a tasting with the Harrison cider to try and pull out the flavour from the apple vs grape.
